You specify which area you want to focus in at the start of the season - goalies, defenders, midfielders or forwards. You could also have no specific focus for your school if you so chose, but once you choose an area you are stuck with it for the whole season.

When you get a new player from that school you have an increased chance of getting a specific area that you chose - for example if you chose a midfielder you would get one 50% of the time and the other 50% of the time you got a random position (which could be midfield). Obviously goalies may have to be at a lower percentage than the other areas as there is only one position in that group.
